Bourbon Chicken

Bourbon chicken is a dish prepared using boneless chicken breast or thigh which have been marinated, cooked and served in a sauce that contain Bourbon whiskey.  Some restaurants do not use whiskey, which is perfectly fine, just replace it with apple juice.  This recipe is a Chinese-American recipe, commonly found in malls where they hand out free samples.  Which I often walk past by multiple times just to get free samples (like Peter Griffin from Family Guy) hehehe.

Anyways, this recipe is very simple and delicious as well.  As the name said it all, it does contain Bourbon Whiskey, but if you don’t like alcohol then you can leave it out.  This dish is characterized by tender meat, a rich, sweet and tangy flavor, and it is glazed over the chicken with a thick sauce.

When this is served in restaurants, bourbon chicken is usually prepared from dark meat (drumsticks and thighs).  The dark meat is tender and juicier than white meat because of the fat content in the legs.  Of course, you can use breast as well to make this.  This dish is best when it is grilled rather than baked due to the presence of charring on the outside.

Ingredients:

Chicken Thighs 3-4

Sauce for Miranating:
Five Spice Powder: 1/2 tbsp
Bourbon Whisky: 1-2 tbsp
Soy Sauce: 1/4 cup / 59 ml
Hoisin Sauce: 1 tbsp
Sugar: 1/4 cup / 59 gm

Sauce for glazing:
Water: 1 cup/ 236 ml
Five Spice Powder:: 1/2 tbsp
Bourbon Whisky: 1-2 tbsp
Soy Sauce : 1/4 cup / 59 ml
Hoisin Sauce: 1 tbsp
Sugar: 1/4 cup / 59 gm
Brown sugar: 1/4 cup / 59 gm
