I have been on the quest to make restaraunt honest food at home but can NEVER re- create the amazing crispy batter used in almond chicken Sui gai. Or the sauce! If you have a recipe for this (or lemon chicken) I would be in debt to you. Also…. A really good dry garlic rib recipe as appetizer. So the short deep fries crispy ribs. Since you have electric stove, carbon steel wok is not ideal for electric stove. It’s best to use Teflon on an electric stove because of its conductive properties as well as its non-stick surface.

Hi JoJo, using teflon wok you do not need to season the wok. The only wok you season is if it’s carbon steel wok because it you don’t season it, the food will stick to the wok. Teflon has a coating on so it will make the food non stick.

I have never used an electric wok before so I not so sure about it. My impression is that electric wok heat up very slowly which is not good for quick stir fry.
