Japanese Teriyaki Sauce

This is just a basic Japanese Teriyaki Sauce, it’s very simple to make.  Some people like it sweeter than what I have.  If you like it sweet, just increase the amount of sugar to 2 tbsp.    You can use this sauce to put on anything you like, for example; sushi, chicken and fish etc.

Soy Sauce: 2 tbsp
Sake/White Wine/Sherry Wine : 2 tbsp
Mirin : 2 tbsp
Sugar: 1 tbsp
Garlic: 1 cloves minced (optional)
Ginger: 1 tsp minced (optional)

    How do I recognize the evaporation of the alcohol? I making the sauce for kids, so I want to make sure that most of the alcohol evaporated.
