How to make Egg flour soup?
Love to cook – love your videos! I could use a good tutorial on the must-have ingredients and their uses – for instance when to use light or dark soy sauce – bean pastes – sauces – thickeners – vinegars – chills – also tools of the trade/knives utensils etc.
Egg flower soup is the same as egg drop soup. Good recipe on woks of life site. I can’t figure out how to find it here but like videos for other dishes, still exploring. Especially appreciated 2 techniques for moo goo gain pan, had always wondered how the restaurants made the white sauce.
Just discovered your youtube videos and website. It’s great As you may know, Chinese-American cuisine in SoCal is different. There is no General Tso, Peking Duck, or Sweet and Sour Chicken! I wish I knew before I moved from Brooklyn (I took 8th Avenue for granted)! I followed the recipe for Sweet and Sour Chicken and couldn’t believe that I was eating it again! And it was so easy! Thanks.

Hi and thanks for taking the time doing a great job with the videos and recipes, my wife and I enjoy every recipe I’ve cooked so far from your videos. We are food snobs and I hate it cause I can always make a better dish at home than going out *sigh*.
I do have a request though and it’s a long shot. many many years ago when I was 16 I worked in a higher end Chinese kitchen and was introduced to my favorite Chinese meal of all time, which was labeled as Special Chow Mien. It had 2 types of mushrooms, (shiitake and button), squid, shrimp, bbq pork, vegetables over a bed of fried noodles (just the outside fried in the wok on both sides, center was soft). It was the most amazing Chinese dish I have had.
I’ve lived in 9 cities in the last 15 years and have literally eaten in every Chinese restaurant in each city (big and small) trying to find that dish and no one has come close. I believe it’s a Cantonese Lo Mien dish of some sort and most restaurants have a similar dish usually labeled as House Chow Mien.
Do you have a recipe that resembles this at all? I would love to hear from you if you do, thanks again, really like everything about the site and the videos, very “sexy”.
Hi Louie, thank you for your “sexy” comment. Was the Special Chow Mein in brownish sauce? I think the Noodles are called “Yi Mein”, they are fried but remain soft, it’s usually flat wheat flour noodles. Almost resemble Lo Mein noodles, I think that is what it is. However, I might be wrong but a picture would be most helpful.

Just tried your General Tso chicken and it was awesome! Respectfully putting in a request for twice cooked pork. Keep the vids coming they’re great.
I made the Char Siu the one day. Decided to slice it added oil to the wok to sear the sliced Char Siu. I used carrots, napa cabbage, onions, water chestnuts, bamboo shoots, and a little green pepper. Basically everything I had left over from making general tso, moo shu chicken and lo mein throughout the week 😉 I used the mother sauce/brown sauce with added garlic. I believe it was close if not spot on, but I’ll let it up to the expert if I am wrong.
Great cooking video’s as always, can you show us how to do sweet n sour pork Cantonese style, the one with the batter.

Have you used XO sauce in your cooking & would you recommend it? How do you make plain fried rice like the Chinese restaurants? The flavor is so distinct and addictive. Using just soy sauce is NOT developing that taste I’m accustomed to. It’s severely lackluster & missing something major. Can you enlighten me please? Thank you.
